La ricetta di questa torta all'ananas rovesciata è di Martha Stewart, lo dico subito. Qualche tempo fa, in un post sul blog, ho scritto di un ricettario con la copertina rigida verde, di mia madre, che è andato smarrito e di cui conservo, nella mente, solo un'immagine sbiadita. Ricordo invece benissimo, i profumi e i sapori dei piccoli babà e della torta all'ananas che mamma faceva quando ero piccola, le cui ricette, erano tratte proprio da esso.<br /></p>

Uniamo uova e vanillina e montiamo ancora. Uniamo ora la farina in tre volte alternandola a due dosi di latte. Adagiamo le fette di ananas, mettendo al centro quella intera, in uno stampo imburrato ed infarinato,versiamo sopra l'impasto. Inforniamo a 175° per circa 40' (facciamo sempre la prova stecchino). Quando è pronta,

Niente che abbia a che fare con Halloween anche se vicinissimo, ma un secondo piatto leggero, gustoso, quasi cremoso e colorato! Bocconcini di pollo con cubetti di zucca, insaporiti con un bel po' di prezzemolo, perfetti anche per la cena e per gli sportivi. In una padella a bordi alti scaldiamo l'olio, rosoliamola la cipolla, quindi , aggiungiamo la zucca. Lasciamo cuocere, meglio se coperto per 10'-15' circa, mescolando di tanto in tanto. Se necessario, aggiungiamo un po' di aqua. Intanto passiamo i pezzi di petto di pollo nella farina, scuotiamo via l'eccesso e uniamoli alla zucca. Aggiustiamo con sale, pepe e prezzemolo. Perhaps, this is the simplest recipe of my blog, you don't need doses but colors are great, the yellow of potates and purple of cabbage are fine.If you want, add pepper. Usually, potates are served as a side dish but they hav a good amount a carbohydrates, you can eat them instead of pasta, bread or rice. <br />

La sua forma particolare è dovuta allo stampo e...uhm, ammetto l'imbarazzo per mostarvela a fette e non intera ma a volte decido di fotografare troppo tardi, non a caso, questa foto nel mio album flickr l'ho intitolata "l'ultima fetta" :-D. Comunque, immaginate un tronco di cono col buco al centro ecco, è fatta così. Somiglia alla angel cake nella quale, però, non c'è olio o burro. Una cosa è certa, il ciambellone americano, che sia aromatizzato alla vaniglia, all'arancia, al limone o perché no al cacao, va fatto. Io l'ho accompagnato con una crema al cioccolato e guarnito con foglie di menta ma è buonissimo anche da solo.<br />

La ricetta arriva da una zia che l'ha avuta da un'amica. Quale sia la fonte originale, non lo so, le ricette in rete sono praticamente quasi identiche, quello che posso dire con certezza è che con questa viene bene :-P.<br />
Nella chiffon cake, lo stampo non va imburrato, il composto deve "aderire" alle pareti, nel suo libro "La scienza della pasticceria-La chimica del bignè", <a href="http://bressanini-lescienze.blogautore.espresso.repubblica.it/" target="_blank">Bressanini</a>, ne spiega il perché. Beh, di spiegazioni lì, ce ne sono davvero molte e confesso che, da quando l'ho letto, non spignatto più allo stesso modo :-D ma almeno ho qualche dubbio in meno: adesso ho la certezza che il cremore di tartaro, da solo, non fa da agente lievitante ma che invece va benissimo per stabilizzare gli albumi da montare a neve. Insomma, più ragione e meno cuore anche se, diciamolo, quando non c'è voglia di cucinare, nemmeno la chimica riesce a fare i miracoli.<br />

Nel centro, creiamo una fontana e uniamo, senza amlgamare, l'olio, i tuorli, l'acqua, la scorza del limone e la vanillina. Montiamo gli albumi insieme al cremor tartato a neve fermissima. Ora, con lo sbattitore elettrico, mescoliamo il primo composto fino ad ottenere un composto liscio ed omegneo poi uniamo gli albumi, delicatamente. Trasferiamo il composto nello stampo. Inforniamo nel forno statico preriscaldato, nel ripiano inferiore a 160° per 50' poi alziamo a 175° per altri 10'. Togliamo lo stampo dal forno, capovolgiamo lo stampo fino a raffreddamento.</span><br />

In varie regioni d'Italia, in occasione dell'Epifania, si realizzano diverse ricette, soprattutto dolci. Un po' di tempo fa, le ho cercate e realizzate alcune. Se fate un salto sul <a href="https://www.flickr.com/photos/dulcisinfurno/" target="_blank">mio account flickr</a>, vedrete le foto dei Befanini, ovvero dei biscotti cosparsi di confettini colorati, della focaccia dolce, una soffice e grande brioche cosparsa di granella di zucchero, delle brioche con uvetta, in una delle quali si nasconde una fava secca, chi la trova, avrà tanta fortuna, della Pinza della Marantega, una torta veneta a base di farina di mais e frutta secca e di cui esistono diverse versioni e poi ci sono le ciambelle. C'è chi le fa <a href="http://dulcisinfurno.blogspot.com/2010/04/ciambelle-e-krapfen.html" target="_blank">con le patate nell'impasto e poi le frigge</a> e o chi invece realizza una pasta brioche, come ho fatto io. È l'occasione, questa, per riproporre <a href="http://dulcisinfurno.blogspot.com/2009/10/brioches.html" target="_blank">una delle ricette</a> a cui sono più affezionata, ma con un tocco di colore in più! Ottime per la colazione, la merenda, non solo domani.<br />

125ml circa di latte tiepido<br />
50g di zucchero<br />
35g di burro fuso<br />

Sciogliamo il lievito in una parte del latte insieme a un cucchiaino di
zucchero. Lo aggiungiamo alla farina e mescoliamo. Quindi uniamo tutti
gli altri ingredienti tranne il latte, che metteremo un po' alla volta.
Impastiamo finché non si sarà formata la palla che lasceremo lievitare

Si, perché la zucca è insieme ad un formaggio. In un altre due ricette postate in precedenza, l'ho abbinato al robiola che può essere sostituita con il proprio formaggio preferito, basta che sia cremoso, spalmabile, può andare bene anche lo yogurt greco, un po' di spezie, ed è fatto. Pane a fette, tostato, baguette o no, non ha importanza. Nnon serve neanche essere precisi nelle dosi, ma è meglio non dimenticare il prosecco! Buon anno!</div>

finché non sarà morbida (circa 15'), aggiustiamo di sale e pepe. Lasciamo raffreddare. In
una ciotola mettiamo il formaggio, un po' di sale e pepe,
mescoliamo bene. Spalmiamo il formaggio sulle fette di pane già tostato, mettiamo sopra un po' di zucca. Decoriamo con fili d'erba cipollina e serviamo.<br />

Dunque, i segnaposto della prima foto, li ho realizzati con la porcellana fredda anche conosciuta come pasta di mais. È una pasta modellabile che si asciuga all'aria. La lavoro da qualche anno, nel <a href="https://www.facebook.com/MaisEPoiMais/" target="_blank">mio shop su Etsy troverete altre idee</a>. Le stelle asciugano in circa 24 ore ma se non avete la porcellana fredda, niente panico, potrete fare le vostre stelle segnaposto con altri materiali!<br />
La scelta è infinita: das, fimo, altra posta modellabile ed uno stampo per biscotti. Se non avete mattarelli o mascherine per creare il motivo, guardatevi intorno, troverete qualcosa con cui creare il motivo, stecchini di legno, forchette, ecc. altrimenti, vanno bene anche lisci!<br />
Ancora non ci siamo? Carta o cartoncino, feltro, pannolenci e stoffa se sapete cucire (va molto la scozzese), possono fare al caso vostro. Se avete la big shot e qualche bella fustella a stella, farete delle stelle perfette in men che non si dica, altrimenti utilizzate uno stampino o armatevi di forbici, create voi la vostra stella da replicare con la carta, ecc.. Usate diversi colori e forme, vanno bene, ad esempio, alberelli e/o palline, un po' di spago o nastri, colori vari, pennarelli, tempere, acrilici, acquerellabili, colla e tanta fantasia, insieme ai più piccoli completerete la vostra tavola di Natale! Queste decorazioni, vanno bene anche per l'albero...magari quello dell'anno prossimo.<br />

Stendiamo la porcellana fredda ad uno spessore di circa 5mm, creiamo il motivo con il mattarello, ecc., e con uno stampo da 6cm, ricaviamo delle stelle. Lasciamo asciugare per un giorno girandole di tanto in tanto. Con una spugna, applichiamo l'acrilico oro e lasciamo asciugare. Ricaviamo dei rettangoli da un cartoncino, facciamo il foro e leghiamoli alle stelle con dello spago. Per un tocco di colore in più, applichiamo delle campanelle.<br />

Keep calm and read this post, I will give you some ideas and suggestions to make your own holiday place cards, you can make them with children. <b>The most important ingredient is the fantasy!</b><br />

I made the place cards in the first picture in cold porcelain. Italians also called it "pasta di mais". Cold porcelain is an air dry clay, if you have not it don't worry, you can use a different dry clay. Instead of embossing mask or rolling pin, look around you, use a fork, wooden sticks, etc. or make them smooth!<br />
If you have not a modeling clay there is not problem! Cardstock, foam, felt and fabric (Scottish is the right in this period) go well! If you have a big shot, you will make perfect stars, if not, make stars with a cutter or make your own shape, you only need scissors. Cardstock in different colors and shapes (tree and balls are perfect), twine, ribbon, watercolors, markers, acrylics, tempera and more, glue and a lot of imagination, the touch of your babies and your Christmas table will be complete! This ornaments go well for the Christmas tree too.<br />

La ricetta, è basata su quella dei <a href="https://dulcisinfurno.blogspot.com/2010/11/biscotti-alle-nocciole.html" target="_blank">biscotti alle nocciole</a>, c'è qualche piccola variazione e qualche minuto in più in forno per rendere i cantucci più asciutti e duri ma regolatevi, secondo il vostro gusto. I biscotti si conservano per molto tempo in un contenitore a chiusura ermetica. Comunque vada, auguri!<br />

<span style="font-weight: bold;">Ingredienti </span>:<br />
300g di farina <br />
150g di zucchero<br />
2 uova<br />
50ml di latte tiepido<br />
6g di ammoniaca<br />
1 pizzico di sale<br />
150g di mandorle tostate<br />
Altro latte se necessario<br />
1 albume per spennellare (facoltativo)<br />

<span style="font-weight: bold;">Procedimento</span>:<br />
Sciogliamo l'ammoniaca nel latte. Aggiungiamola a tutti gli altri
ingredienti, tranne le mandorle e impastiamo a mano (o con lo sbattitore
elettrico) fino ad ottenere un impasto omogeneo, appiccicoso, ma non
troppo duro. Incorporiamo le mandorle. Con le mani infarinate o con un
cucchiaio, dividiamo l'impasto in 2 o 3 filoni e ponendoli direttamente
su una teglia coperta di carta forno. Spennelliamo con l'albume.
Inforniamo a 180° per circa 25-30' finché la superficie non risulta
dorata. Togliamo la teglia dal forno e con un coltello a lama
seghettata, tagliamo i filoni a fette spesse 1cm. Mettiamo le fette con
il lato tagliato verso l'alto nuovamente nella teglia e inforniamo per
altri 5-10' per farli asciugare. Lasciamo raffreddare su una gratella.<br />

<a name='more'></a>As long as to know to cook, otherwise..good look! LOL. I delcine all responsability but I suggested to you to make Cantucci, the typical Tuscan biscuits with almonds and and to eat them with vin santo, a typical Italian dessert wine.<br />

biscotti, reduce the second baking by a few minutes on each side. If you
want you can brush them with the egg white for a shiny crust. Biscotti
will keep for several weeks in an airtight container. Anyway, best wishes!</span></span><br />

1,69 fl oz warm milk <br />

0,21 oz ammonia<br />
1 egg white for brushing (optional)<br />

Dissolve ammonia in the milk. Combine it by hand or an electric mixer
with other ingredients excepted almons until dough is homogeneus,
sticky but not too hard. Add almonds and combine. With floured hands
or a spoon, divide the dough into two or tree portions and place onto
the baking sheet covered with paper . Brush with the egg white. Bake in
the preheated oven to 355°F for 25-30 minutes until surface is golden.
Remove from the oven and using a serrated knife, cut into slices about
1/2 inch thick. Arrange the cookies on the baking sheet cut side up and
bake for another 10 minutes until lightly toasted and dry. Let cool
on a rack.

Quando bolle uniamo la zucca tagliata a fette sottili (meglio utilizzare la mandolina) e spegnamo il fuoco. Copriamo e lasciamo riposare per 12 ore nella pentola. Trascorso il tempo scoliamo bene e lasciamo asciugare. Condiamo con aglio in pezzi, origano, prezzemolo tritato. Poniamo in barattoli e copriamo con olio di oliva.</span></div>

Fetta di torta e tè per tutti (vabbè, detto tra noi, preferisco il caffè)! Non è questa la classica ciambella marmorizzata. Per ottenere l'effetto marmorizzato, dopo aver versato l'impasto al cacao su quello alla vaniglia, basta fare pochi movimenti a spirale passando tra i due impasti.</div>

Uniamo poi il burro un po' per volta e la farina e il lievito setacciati, ed il latte, poco alla volta, l'impasto deve essere morbido. Togliamo 1/3 dell'impasto e a questo uniamo il cacao, mescoliamo bene. Versiamo l'impasto chiaro, in uno stampo imburrato ed infarinato, copriamo con l'impasto al cacao. Inforniamo a 200° per circa 40' (io ho utilizzato il forno a gas, facciamo sempre la prova stecchino). Quando è pronta, sformiamo la torta e la lasciamo raffreddare su una gratella.</span><br />

Noi le chiamiamo </span><i style="line-height: 1.6em;">zeppole</i><span style="line-height: 1.6em;"> o </span><i style="line-height: 1.6em;">zeppole a cucchiaiate.</i><span style="line-height: 1.6em;"> Non so quelle delle vostre, ma quasi tutte le ricette della mamma sono ad occhio cioè senza dosi certe. Siate pronti perciò ad aggiungere farina o acqua al bisogno ricordando che l'impasto deve essere quasi liquido.</span></div>

Sciogliamo il lievito nell'acqua insieme allo zucchero, aggiungiamo l'uovo, mescoliamo, quindi aggiungiamo la farina, lavoriamo ancora, uniamo il sale e mescoliamo ancora fino ad ottenere un impasto filante che lasceremo lievitare coperto da un sacchetto per alimenti fino al raddoppio di volume. Quindi con l'aiuto di un cucchiaino bagnato, prendiamo un po' d'impasto e lo lasciamo cadere nell'olio ben caldo. Friggiamo le frittelle finché non risulteranno ben dorate e poniamole su carta assorbente. Passiamole nello zucchero semolato. Serviamo.</div>

In una ciotola mettiamo la farina, aggiungiamo il lievito sciolto e l'acqua mescolando rapidamente con una forchetta e infine mettiamo il sale: l'impasto risulterà molle e appiccicoso, non liscio. Spolveriamo la superficie con abbondante farina e lasciamo lievitare coperto per 8-10 ore. A questo punto prendiamo l'impasto e con l'aiuto di un leccapentola lo trasferiamo sulla spianatoia ben infarinata facendo in modo che la parte infarinata sia rivolta verso l'alto, lo dividiamo in tre filoni uguali (io li ho fatti diversi perché li ho infornati ad altezze diverse), e con delicatezza li trasferiamo in una teglia coperta da carta forno distanziati tra loro (possiamo anche mettere l'impasto direttamente sulla carta forno e dividere i filoni direttamente lì).</span><br />

Ora sembrerà che sono tornata perché ho tanta zucca da consumare ma no, non è così, credetemi! Intanto vi tranquillizzo dicendovi che il bel pezzo che avevamo è finito e, come ogni anno, per accelerare il consumo (soprattutto per fare contento papà che non ne va pazzo), ci faccio la marmellata. L'anno scorso l'ho aromatizzata con l'Amaretto di Saronno che ci sta benissimo, stavolta invece l'ho fatta semplice e l'ho lasciata asciugare molto.</span><br />

Anche la cannella ci sta molto bene. Se si decide di aromatizzarla, quando la marmellata raggiunge la giusta consistenza, si può aggiungere o qualche pizzico di cannella o mezzo bicchierino di liquore, quindi mescolare bene e riporre nei vasetti. Vale spendere una parola anche per la quantità di zucchero: penso sia bene regolarsi in base alla dolcezza dell'ortaggio. Quello che ho usato io era moooolto dolce per cui non ne ho messo tanto. Ho voluto aggiungere la robiola per smorzare la dolcezza dell'ortaggio e vi dirò, a me è piaciuta proprio tanto. Decidete voi se frullare per ottenere una crema più o meno liscia come ho fatto io. Naturalmente, non è obbligatorio utilizzare l'olio aromatizzato, lo si può sostituire con del rosmarino fresco. Ma se ne avete voglia, preparatelo: lasciate in infusione nell'olio d'oliva qualche rametto pulito di rosmarino per almeno due settimane.</span></span><br />

Transfere pumpkin into a container and blend. Return to pan, add robiola cheese and cream on a low flame and stir to amalgamate. Ladle into individual soup bowls. Drizzle with olive oil and serve.</span></div>

<span style="background-color: white;">Per accontentare tutti, <a href="http://www.tiadorogustoitaliano.it/" target="_blank">Star ha creato ben quattro varianti</a> del gustoso condimento e cioè <i>Gran Ragù Star con Salsiccia, Gran Ragù Star con Verdure, Gran Ragù Star Con Funghi Porcini e ovviamente Gran Ragù Star Classico</i>.</span><br />
Io ho utilizzato quello con le Verdure. Le frittelle sono morbidissime e se amate il ragù, dovete provarle! Sono buone calde ed ottime fredde e si preparano in pochissimi minuti.<br />

500g di ricotta<br />
1 lattina di Gran Ragù Star con Verdure<br />
3 cucchiai di farina<br />
1 rametto di rosmarino tritato<br />

In una ciotola mettiamo la ricotta, il ragù e il rosmarino e mescoliamo con la forchetta. Uniamo la farina poca alla volta e amalgamiamo bene: otterremo un composto cremoso. In una padella scaldiamo l'olio. Prendiamo un po' di composto con un cucchiaio, lasciamolo cadere nell'oolio ben caldo. Cuociamole per circa 4-5 minuti per lato o comunque finchè non risulteranno ben dorate. Poniamo le crocchette su carta assorbente. Serviamole fredde.</div>

In a bowl stir ricotta cheese with ragù sauce and rosemary using a fork. Add flour and stir well to obtain a creamy mixture. In a pan, heat the vegetable oil. Pull off little pieces of the mixture and drop into the hot oil, fry for 4 to 5 minutes each side or until golden. Remove and drain on paper towels. Serve cold.

Le belle giornate mettono di buon umore e torna la voglia, a chi l'aveva persa, di rimettersi ai fornelli. Ma se nemmeno l'arrivo della bella stagione è riuscita nell'impresa io vi do un buon motivo per riparlare di cucina!<br />
Infatti, grazie all'impegno de <a href="http://www.ilmanicaretto.it/">Il Manicaretto</a> possiamo, nel nostro piccolo, dare un po’ di aiuto all’<b>iniziativa benefica “<i>Dolci Ricordi</i>”: un libro in cui saranno raccolte ricette di dolci e dessert legate ad un momento felice della propria vita, ad un ricordo di infanzia o semplicemente ad una piacevole emozione</b>. L’intento è dimostrare che così come il cibo rappresenta il nutrimento per il corpo, allo stesso modo le emozioni e i ricordi sono un nutrimento per l’anima: entrambi, se vissuti in modo consapevole, possono lasciare un segno positivo importante.<br />

Nella ricetta ho indicato le quantità usate da me ovviamente, ma anche qua si può variare a seconda del proprio gusto. Altre variazioni potrebbero riguardare il tipo di pasta e il taglio dei finocchi. <b>Procedimento</b><br />
Mettiamo a bagno in abbondante acqua i borlotti per 12 ore poi scoliamoli, sciacquiamoli e cuociamoli in abbondante acqua al dente. In una padella soffriggiamo l'aglio in abbondante olio d'oliva caldo. Uniamo le patate pelate e tagliate a dadi. Soffriggiamo per circa 10' mescolando spesso quindi uniamo i fagioli con un po' di acqua di cottura. Copriamo e cuociamo per altri 20' circa bagnando con l'acqua dei fagioli e mescolando di tanto in tanto. Aggiustiamo di sale. Al termine cospargiamo con del prezzemolo tritato, mescoliamo ancora. Dividiamo l'insalata nelle scodelle, irroriamo con un filo d'olio d'oliva e serviamo.<br />

Questa non è una ricetta nata con l'intento di smaltire il panettone avanzato ma per creare qualcosa di diverso anzi, di insolito! Molti di voi già conoscono il sito <a href="http://www.insolitopanettone.com/">www.insolitopanettone.com</a> creato da <a href="http://www.loison.com/index.php?lang=it">Loison, pasticceri dal 1938</a>, che propone il panettone non solo come dolce delle feste natalizie ma anche come dolce della domenica e ingrediente per ricette uniche. Ovviamente ci ho provato anche io ma non è stato facile: il panettone che ho utilizzato per questa ricetta infatti, è il panettone al <i>Fico Dottatato di Loison</i> che è già <i>insolito</i> di suo. Sapore particolare e delizioso e poi, come tutti i panettoni Loison, è fatto con lievito naturale e ingredienti genuini.</span><br />

Ho pensato poi di utilizzare il panettone in briciole. Indecisa se lasciarlo con la sua consistenza naturale, quindi morbido, alla fine ho deciso di farlo <i>asciugare</i>. Il risultato è stato molto buono: mentre si dora, il dolce sprigiona un profumo irresisitibile. Togliamo l'uvetta e i fichi dalle fette di panettone. Sbriciloliamo il panettone. In una padella sciogliamo il burro e doriamo le briciole del dolce. Teniamole da parte. Nella stessa padella sciogliamo altro burro, uniamo gli aghi di rosmarino lavati e asciugati, l'uvetta e i fichi e cuociamo per 3-5' mescoldando spesso. Scoliamo gli gnocchi al dente e trasferiamoli nella padella, uniamo 3/4 delle briciole dorate, mescoliamo bene, aggiustiamo di sale e facciamo insaporire. Dividiamo la pasta nei piatti, cospargiamo con le briciole tenute da parte. Remove raisins and figs from panettone slices. Set aside. In the sane pan add the remaining butter, add rosemary (washed and dried), raisins and dottato figs. Cook for 3/5 minutes stirring frequently. Drain gnocchi al dente and transfer them into the pan, add 3/4 of crumbs and stir well. Add salt to taste.
